2 ½ cups all-purpose flour
3 Tbs. sugar
2 tsp. baking powder
¾ tsp. salt
1 stick & 7 Tbs. chilled butter
¾ cup cold buttermilk
Apples & Filling:
6 Tbs. light brown sugar
1 tsp. cinnamon
3 Tbs. unsalted butter, softened
4 Golden Delicious apples
1 egg white, lightly beaten
Step 1: Make the dough.
Combine flour, sugar, baking powder, and salt.
Slice butter into ¼ inch slices and combine with a pastry cutter until it is blended into the flour.
Add the buttermilk and knead gently until it forms a ball. Wrap the dough in plastic and stick it in the refrigerator.
Step 2: Set up apples.
In a small bowl, combine sugar and cinnamon. In another bowl, combine 3Tbs. of the cinnamon-sugar mixture with the butter.
Peel the apples and halve through the equator.
Remove the core and seeds from each half carefully so you don’t poke a hole through the apple. (If you make a hole through the apple, all the juices will run out.) Fill the holes with the butter mixture.
Step 3: Assemble.
Roll out half the dough at a time on a lightly-floured surface. Cut as many 5-inch squares as you can and set an apple half with the butter-filled side up on each square.
Fold the corners up together, crimp the edges, and smooth around the apple to seal, removing excess dough. Make sure there are no holes.
Place the dumplings at least 2 inches apart on a parchment-lined baking sheet.
Then use a butter knife and poke a vent hole in the top of each dumpling.
Brush the top of the dumplings with egg white and sprinkle the cinnamon-sugar mixture.
Step 4: Bake. Bake at 425°F until the dough is cooked and the apple is soft when inserted with a knife. About 20 minutes. Serve warm, drizzled with a little cider sauce if you wish. Makes 8 dumplings.
Cider Sauce for Apple Dumplings
1 cup apple cider
1/3 cup maple syrup
¼ tsp. cinnamon
2 tsp. cornstarch
1 ½ Tbs. unsalted butter
1 tsp. lemon juice
Boil cider, maple syrup, and cinnamon while stirring. Reduce heat and simmer until mixture thickens. Stir cornstarch with 1 Tbs. of water and add to cider to thicken.
Remove from heat, stir in butter and lemon juice, and serve over dumplings.
